Nerd Food: Make Your Own Roasted Pumpkin Seeds!
Chances are you've carved a pumpkin or two in your life. Growing up, my mom would take the scooped-out pumpkin guts and use them in various recipes, such as soups, pies, and more. But she always threw the seeds away, which I found odd. Surely there was something they can be used for!
But I was a child, and the internet wasn't a big thing. Plus, I was far too lazy and never looked for ideas in a cookbook. The 1990s were a wild time. Anyway, I grew up, and the internet became a thing. And today I found myself with some fresh pumpkin guts!
To start, make sure your fresh pumpkin innards are in a bowl. In another bowl, melt some butter (you can also use olive oil), and toss the seeds in after you've washed the. From there you can mix in anything you'd like! Brown sugar and cinnamon, salt and pepper, or Old Bay seasoning, which is what I used.
Heat your oven to 375 degrees, spread the seeds over a baking sheet, and pop them in the oven for 20-30 minutes, or until they look toasted.
Let them cool off for a few minutes, and then enjoy! These are an excellent snack, and they are super easy to make. Stay tuned for what you can do with the other pumpkin innards!
